Recipe – Margherita Pizza


Who doesn’t love pizza? Pizza is my kryptonite but I have found a way to at least make pizza with real ingredients that won’t destroy the waistline.


– Pizza Dough (I just get it pre made from the deli)
– Flour for dusting
– Homemade Tomato Sauce (see below)
– Fresh Basil Leaves
– Mozzarella cheese
– Sliced tomatoes

Tomato Sauce Ingredients
– 1 Can (28oz) plum tomatoes
– 3 Tablespoons of red wine
– 4 Tablespoons minced garlic
– 1/2 small onion chopped
– 1 Tablespoon olive oil
– 5 or 6 Fresh basil leaves (chopped)
– 3 Tablespoons red wine
– salt and pepper

Step 1. Prepare Sauce


Coat bottom of a pot or pan with olive oil and add minced garlic and onion. Sauté onions and garlic in oil for a few minutes and then add wine, chopped basil, and plum tomatoes. Add salt and pepper to taste and bring to a boil. Once it boils just turn down the heat and let it simmer for about 20 minutes. After 20 minutes turn off the heat and the sauce will start to thicken as it cools.

Step 2. Prepare the Pizza


Preheat the oven to 500 degrees. Take your dough and start to knead it and flatten it out. If your really good you can flip it in the air and make it into a perfect circle. My helper unfortunately hasn’t mastered that and neither have I. If you’ve never worked with dough before make sure you dust your surface and rolling pin with some flour to keep everything from sticking. Once its flattened out, move your dough to a baking pan or if you are lucky enough to have one, a pizza stone. ladle the sauce onto the dough making sure to keep it about an inch away from the edge unless you want a huge mess on your pan and oven.


Once the sauce is on add your mozzarella cheese, tomato slices, fresh basil leaves, or any other toppings you want.


Step 3. Cook the Pizza

Preheat your oven to 500 degrees. Add your pizza, or pizzas if you had enough dough, to your oven and cook for 10-15 minutes. When the crust looks crispy and the cheese has all melted you’ll know its done.


Step 4. Eat and Enjoy
