Baked Sweet Potatoes

A quick recipe to add some healthy carbs to your meals.

Ingredients:

Sweet Potatoes
Cumin
Turmeric
Five Spice Powder
Paprika/Cayenne/Chipotle Powder (Optional)
Coconut Oil

– Wash and cut sweet potatoes into discs no larger than a 1/4″

– Preheat oven to 450

– Place potatoes in bowl and add above ingredients (amounts are personal preference)

– Put lid or cover on bowl and shake contents to cover all the discs

– Bake on rack for 15-20 minutes

I like to throw these in the same tupperware as my lunches to complement a meat and vegetable in there.
